Lahore's best food has never needed a table. It comes off a tawa the size of a cartwheel, out of a karahi black with thirty years of use, from a man who has made one thing every day since his father made it before him. The restaurants are fine. The streets are the point.

This is a list for eating on your feet: the dawn trotters people queue for before work, the winter fish that only tastes right when it's cold enough to see your breath, the kulfi counter that has outlasted every trend on the road.
